Separating Eggs
Well, I thought I knew every way of separating eggs and yolks: with the shell, through the fingers, even using a gadget. But this afternoon at her request I was teaching the girl who works for me how to make a cake. She thought my methods of separating eggs incredibly clumsy compared to her mother’s.
She just knocked the point of the egg on the counter to crack it, peeled off a tiny bit of shell, and poured out the white. To get the yolk, she cracked the whole shell.
Now why have I never seen such a method before?
